I found this recipe on Butterkicap's website and I couldn't wait to try it out, so I thought I would share it with you all. Trust me, this recipe is the bomb!

Rendang Daging Resepi Masakan Rendang Tradisional Butterkicap

Ingredients

  • 600g beef (cut into bite-sized cubes)
  • 2 stalks lemongrass (bruised)
  • 5 kaffir lime leaves (shredded)
  • 2 turmeric leaves (shredded)
  • 2 cans of coconut milk
  • 4 tablespoons kerisik (toasted coconut)
  • 5 tablespoons oil (for frying)
  • Salt to taste

Spice Paste Ingredients

  • 15 dried chillies (soaked, deseeded and blended)
  • 10 shallots
  • 6 cloves of garlic
  • 3 pieces of ginger (thumb-sized)
  • 3 pieces of galangal (thumb-sized)

Instructions

  1. Heat the oil in a wok or pot and fry the spice paste for 5-10 minutes.
  2. Add the beef and cook for 5 minutes or until the beef is browned.
  3. Add the lemongrass, kaffir lime leaves, turmeric leaves and salt. Fry for a further 2 minutes.
  4. Pour in the coconut milk and bring to a boil.
  5. Lower the heat and let it simmer for at least 45 minutes or until the beef is tender and the gravy is thick.
  6. Stir in the kerisik and let it simmer for another 5 minutes.
  7. Check the seasoning and adjust to taste.
  8. Serve hot with steamed rice or glutinous rice.
