  • 1 tablespoon of cooking oil

For the salad:

  • 1 cup of shredded raw cabbage
  • 1 cup of shredded raw long beans
  • 1/2 cup of shredded raw carrots
  • 1/2 cup of shredded raw cucumber

For the sambal:

  • 8-10 shallots, peeled and sliced
  • 4-5 dried chillies, soaked in hot water and drained
  • 2 cloves of garlic, peeled
  • 1/2 teaspoon of belacan (shrimp paste)
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of sugar
  • 1 tablespoon of cooking oil

Instructions:

For the rice:

1. Combine the washed and drained rice, water, pandan leaves, salt, and cooking oil in a rice cooker.

2. Cook the rice according to the rice cooker's instructions.

For the fish:

1. Marinate the mackerel fillets with salt, turmeric powder, chilli powder, cumin powder, coriander powder, fennel seed powder, lime juice, and cooking oil for 15-30 minutes.

2. Heat a pan over medium-high heat and add the marinated fish fillets.

3. Fry the fish for 3-4 minutes on each side or until cooked through.

For the sambal:

1. Heat a pan over medium-high heat and add the cooking oil.

2. Add the sliced shallots and stir until they turn translucent.

3. Add the soaked and drained dried chillies, garlic, and belacan. Stir until fragrant.

4. Add the salt and sugar and continue to stir until the sambal is well combined and the oil starts to separate from the mixture.

Assembly:

1. Serve the cooked rice on a platter or plate.

2. Arrange the shredded raw cabbage, long beans, carrots, and cucumber on top of the rice.

3. Place the fried fish fillets on one side of the platter or plate.

4. Spoon the sambal into a small bowl and place it next to the fish.
