  • 1 tsp coriander powder
  • 1 stalk of lemongrass, bruised
  • 2 kaffir lime leaves
  • 2 cups of mixed vegetables (green beans, carrot, cabbage, and tofu)
  • Salt and sugar to taste

The Instructions:

For the Lontong:

  1. Mix the rice flour, water, and salt together in a bowl.
  2. Pour the mixture into a heat-resistant plastic or banana leaf pouch.
  3. Steam the pouch for about 2 hours, or until the rice cake sets and becomes firm.
  4. Remove from the steamer and let it cool.
  5. Cut the Lontong into bite-sized pieces.

For the Kuah Lodeh:

  1. Heat oil in a pot and sauté the shallots, garlic, ginger, and chillies until fragrant.
  2. Add the turmeric powder and coriander powder, and cook for a further 1-2 minutes.
  3. Add the water, coconut milk, lemongrass, kaffir lime leaves, and mixed vegetables.
  4. Season with salt and sugar to taste.
  5. Bring to a boil then reduce the heat and simmer for about 10-15 minutes.
  6. Serve the Kuah Lodeh with the sliced Lontong on a plate.
