Instructions:
- Marinate the chicken with tamarind paste and salt for at least 30 minutes.
- Heat 3 tablespoons of oil in a pot over medium heat. Add in the marinated chicken and stir-fry until the chicken is browned.
- Remove the chicken from the pot and set aside.
- In the same pot, add in the chopped onions, minced garlic, and minced ginger. Sauté until the onions are translucent.
- Add in the chopped tomatoes and tomato paste. Stir-fry for a few minutes until the tomatoes start to breakdown.
- Add in the chili powder, cumin powder, and coriander powder. Stir-fry until the spices are fragrant.
- Add in the water and sugar. Stir well.
- Bring the sauce to a boil, then lower the heat and let it simmer for about 10 minutes.
- Add in the chicken and stir well to coat the chicken with the sauce.
- Let the chicken simmer in the sauce for another 10-15 minutes until the sauce thickens and the chicken is cooked through.
- Serve hot with rice.
